About Truffles


Truffles grow in symbiosis with higher plants (trees) and require acidic soil with pH ranging from 6.5 to 8. Ideal conditions for growing truffles are in the soil with pH level slightly above 7. Since the last decade of the last century to this day the most comprehensive and productive researches on truffles have been conducted by now in Bosnia and Serbia. Since 1991 on the total territory of Bosnia and Serbia, at more than 200 locations, over 40 species of underground and semi-underground fungi have been found.

 Moreover, 13 species that have been found are entirely of the real truffle. This almost means that nearly half of all known species of European truffles have been found by now in Serbia, a relatively small part of Europe, indicating indisputably a considerable abundance of our country regarding hypogeal mushrooms.

White Truffle

White Truffle (Tuber Magnatum Pico) is the most valuable truffle. It has a rather pungent smell and yellowish brown or greenish to grayish green colour. Harvest season lasts from the end of summer until beginning of winter (from September to January). It grows underground at depth of 40cm and can even be found as deep as 1m underground. White truffle grows in symbiosis with the following trees: oak, poplar, hornbeam, willow, hawthorn…

Black Summer Truffle

Black Summer Truffle (Tuber Aestivum) has a gentle and pleasant aroma with a distinctive mild scent of fresh mushrooms. It is harvested from mid-June till the end of October. It grows in limestone region, but it can also be found in clay soil. Tubers grow only a few centimetres deep underground in symbiosis with pine tree, sessile oak, hop-hornbeam, hazel.

Black Autumn Truffle

Black Autumn Truffle (Tuber Uncinatum) has a pleasant aroma and taste, similar to hazel aroma. It is harvested from the end of September till the end of February. It grows in shadowy places in symbiosis with oak, Turkey oak, European hop-hornbeam, hazel, beech.

Black Winter Truffle

Black Winter Truffle (Tuber Brumale) has a pleasant aroma and taste. It is harvested from mid-November till the end of March. It grows in limestone regions of high porosity ranging from 5 to 30 cm, in symbiosis with the following trees: pine tree, oak, hop-hornbeam.

Black Autumn Truffle

Black Autumn Truffle (Tuber Macrosporum) has a purple-brown to gray-brown flesh, and thin white root hairs. It has a strong smell of garlic, similar to Italian white truffle (Tuber Magnatum). It is harvested from October to January. It grows in symbiosis with oak, poplar, hornbeam, and shrub.

Penny Bun (Porcini)

Penny Bun (Boletus Edulis) is an edible fungus, which grows in deciduous and coniferous forests. It grows in the glades and usually sunny slopes covered in moss. It can be found in Europe from summer to autumn. In Bosnia and Herzegovina penny bun can generally be found in oak and birch forests, as well as in mixed forests at elevation of ca. 1200m. It can also be found in Europe in mixed-conifer forests.

Golden Chanterelle (Girolle)

Golden Chanterelle (Cantharellus Cibarius) is funnel-shaped and orange-yellow in colour. It usually grows in a group of mushrooms of the same family, in symbiosis with the roots of deciduous and evergreen trees, mostly oak and silver fir trees. Golden Chanterelle is a highly aromatic and delicious mushroom. It grows from the end of spring till the end of summer.

True Morel (Morchella)

True Morel (Morchella) is a genus of edible and widely recognized mushrooms. These extraordinary mushrooms have a honeycomb structure. They are very precious in the culinary world. Thousands of people harvest them every year for their taste and the pleasure of hunting. True Morel has a white to ochre flesh and a very pleasant smell and taste. It is irregularly shaped and hollow inside. The cap is egg-shaped or oval. Trees that are in symbiosis with morels are maple trees, poplars and old apple trees.
